In this Instructable, I will show you how to make apple pie cookies. If you like apple pie and you like cookies, you will love this super easy dessert recipe.

Supplies

Ingredients:

  • 1 to 2 standard pie crusts for 8 to 16 apple pie cookies
  • 2 apples - I use Granny Smith
  • 1/2 cup of brown sugar (100g)
  • 3 Tbsp of butter (salted or unsalted) (42g)
  • 1/4 tsp of salt (1g)
  • 1 tsp of lemon juice or apple cider vinegar (5g)
  • 1/4 tsp of nutmeg (1g)
  • 1/2 tsp of cinnamon (1g)
  • 1 Tbsp of cornstarch (14g)
  • 1 egg - for the egg wash

Tools:

  • Knife
  • Peeler
  • Cutting board
  • Pot
  • Sheet pan or cookie sheet
  • Silicone baking mat or parchment paper
  • Cookie cutters or biscuit cutters

Step 1: Prep Pie Dough

Begin with your pie dough. You can use a premade pie dough if you want or you can use this yummy homemade pie crust dough recipe.

Keep your dough in the fridge until ready to assemble the cookies.

Step 2: Prep the Apples

Rinse and dry the apples. Then core them. I usually just run my knife down the core, but if you have an apple peeler/core combo then great.

Now cut the apple slices into small chunks and place them in a medium pot.

Add the butter, brown sugar, nutmeg, cinnamon, and lemon juice or apple cider vinegar.

Step 3: Cook the Apples

Add the pot to your burner and set the heat to medium. Stir it a bit until the butter melts. Then just stir it occasionally. Let it cook for about 10 minutes.

After 10 minutes you will want to stir it frequently to keep it from burning. Add the cornstarch and then stir and cook it for about 5 more minutes until it thickens. It shouldn't be super liquidy at all and the apples should be nice and soft.

Remove the pot from the burner and pour the apple pie filling into a bowl. Allow it to cool for about 10 minutes at room temp then place it in the fridge with your pie crust dough and allow it to chill for another 20 minutes.

Step 4: Cutting the Dough

Preheat the oven to 375F/190C

Roll out the pie dough on a lightly floured surface. Then cut out several circles with a biscuit cutter or cookie cutter. I use the 2 1/2 or 3-inch cutters. That makes a great size.

Place the rounds on a sheet pan lined with parchment paper or a silicone baking mat for now or just set them aside.

Take the scraps push them together and roll them out into a rectangle about 4 inches wide and 6 to 8 inches long. Then use a pizza roller and cut small 1/4 inch wide strips of dough. These will be for the lattice. If you are making the classic top and not the lattice just cut out more rounds with the scraps instead of the strips.

Step 5: Lattice Style

Take 1 egg and whisk it up in a small bowl.

Baste a bit of egg wash on the top of one of the rounds. Then add a spoonful of pie filling in the center. If your filling is a little runny, just try and pick up the apple chunks and not much of the liquid.

Now do the lattice (over-under) with 6 total strips. press the edges down into the bottom piece of dough.

Then use your same cutter and cut it down so it trims all the excess lattice strips making a perfect circle again.

Brush a bit of egg wash on the lattice and sprinkle it with some cinnamon and sugar.

Place the cookie or "mini pie" on the sheet pan or cookie sheet.

Step 6: Classic Style

Now to make the classic style again take a round and add some egg wash on top around the edges. Then place a spoonful of filling in the center

Take another round and roll it out just a bit larger. Then place it on top. Seal the edges of the cookie or mini pie with a fork.

Poke the top a few times with a fork which will allow any steam out while it bakes. Brush the top with egg wash and then sprinkle some cinnamon and sugar on top.

Step 7: Bake

1 standard pie sheet will make about 8 cookies. The filling makes enough for 16 cookies so you can use both sheets that come in the package or double your pie dough recipe if it is only for 1 pie crust.

OR you can use the remaining pie filling and pour it on top of the cookies or use it on top of ice cream, pancakes, waffles, etc. It is so yummy to just eat by itself too, haha.

Bake the cookies in the oven for 22 to 26 minutes until they are nice and golden brown.

Allow them to cool on the pan for a few minutes then transfer them to a wire rack to cool completely or serve them a little warm.
